Most oyster mushroom grow kits produce 1–2 harvests: one guaranteed first harvest and a second harvest that is common with proper care. A third harvest is sometimes possible, but it is smaller and not guaranteed.
Many companies advertise “2–3 harvests” without explaining what that actually means. We’ve shipped over 100,000 mushroom grow kits since 2017, and we focus on setting clear, realistic expectations.
This guide focuses specifically on oyster mushroom grow kits, including white, brown, and pink varieties. Other mushroom types grow differently and should not be compared directly.

What Most Home Growers Experience
Our mushroom grow kits are designed for kitchen counters under normal indoor conditions. When kept in a stable location away from heating vents, air conditioners, fans, or open windows, here’s what usually happens.
First Harvest
Small mushroom pins typically appear within 7–14 days after you open the kit and begin misting. With steady misting and normal indoor temperatures, the first harvest can produce up to 0.5 lb of fresh oyster mushrooms.* That’s generally enough for 2–3 servings depending on portion size.
Why We Guarantee the First Harvest
Each mushroom grow kit is produced in small weekly batches to ensure freshness and consistency. Before shipping, every kit is prepared and inspected so it is mature and ready to grow shortly after misting begins.
Our team has over 50 years of combined experience growing mushrooms, and we have shipped more than 100,000 kits since 2017. That experience allows us to set realistic expectations and confidently guarantee the first harvest.

Second Harvest
A second harvest is common when growers follow instructions carefully, soak the kit properly after the first harvest, mist consistently, and use our video tutorial as guidance.
The second crop usually appears 2–3 weeks after the first harvest and produces about 40–60% of the original yield.
Third Harvest (What to Expect)
Some growers attempt a third harvest or bonus crop. Results vary. With steady misting and a stable environment, smaller additional harvests are possible. Each round becomes smaller as the natural nutrients inside the kit are gradually used.
Many growers who follow instructions closely achieve two harvests.
Why Harvests Get Smaller Over Time
Mushrooms grow by using the natural nutrients and moisture inside the kit. Each harvest uses part of those resources.
Soaking restores moisture, but it does not replace nutrients. Over time, there is simply less energy available for large crops. This is normal and expected.
As the kit ages, it can also become more sensitive to dry air or contamination. That is part of the natural life cycle of mushrooms, not a defect.
How Your Home Environment Affects Results
Normal indoor conditions:
Keep your kit in indirect light at 60–75°F and mist 2–3 times daily. Most people get one strong harvest and a reliable second harvest this way.
Dry homes or winter heating:
Low humidity can dry the kit faster. Extra attention to misting may be needed.
More humid environments:
Relative humidity between 65–85% supports stronger additional harvests. Pink oyster mushrooms in particular enjoy warmer, slightly more humid conditions.
Consistency is more important than extreme humidity.
When It’s Time to Retire Your Kit
Eventually, every grow kit reaches the end of its productive life.
No new growth after 3 weeks:
If you soaked properly and maintained moisture but see no new pins, the kit may be spent.
Green mold or dark patches:
These are signs of contamination and usually mean it’s time to compost.
Unusual smells:
Fresh mushrooms smell earthy. Sour or ammonia smells indicate spoilage.
Pink oyster mushrooms naturally have a slightly seafood-like or fishy scent. In some regions they are called salmon oysters because of their color and aroma. This is normal and should not be confused with rot.
Noticeable shrinkage:
If the kit feels lightweight and compressed, most of the growing energy has been used.
At that point, composting or burying it outdoors is recommended.
Going for a Second Harvest or Bonus Crop
If you’d like to attempt a second harvest, follow these steps carefully:
-
With a fork, gently scrape and remove any leftover stems from the previous harvest.
-
In the harvested area, poke an “X” with a fork about 1 inch deep. This helps water penetrate the substrate block and rehydrate the mycelium inside, encouraging a new flush of growth.
-
Submerge the treated side of the kit in about 2 inches of cold water for 48–72 hours to fully rehydrate the block.
-
Let it drain for 15–20 minutes. Wrap the kit in a clean paper towel and mist the treated area 2–3 times daily, using about 5–10 sprays per misting session.
-
Once you see new growth, remove the paper towel and continue misting 2–3 times daily until it is ready to harvest again.

Should You Consider Growing Your Own Mushrooms?
Growing your own oyster mushrooms offers more than just yield.
Many grocery stores mainly carry blue oyster mushrooms. Pink, brown, and white varieties are often harder to find locally. Market prices can reach $20+ per pound depending on region and availability.
Growing at home means:
- Harvesting fresh gourmet mushrooms straight from your own kitchen
- Watching them grow and transform before your eyes
- Creating a memorable, hands-on experience at home
- Growing specialty mushroom varieties rarely found in stores or farmers’ markets
It’s a hands-on, educational experience that works well for families, couples, individuals, or as a thoughtful gift. Watching mushrooms form and mature over 7–14 days is unique and rewarding.
Even one strong harvest delivers meaningful value. Additional harvests are a bonus.
